Pineapple upside-down cake

Makes two cakes

The cake

3 C flour
2 C white sugar
4 eggs
1 1/2 sticks butter
1/2 tsp salt
1 Tbsp baking powder
1 Tbsp vanilla
1 1/2 C soy milk

The pineapple

1 pineapple
1 1/2 C brown sugar
1/2 stick butter

Directions

Cook the pineapple, sugar, and butter in two frying pans.

Cream the butter and sugar in your Kitchenaid. When it's creamy and fluffy, beat in vanilla and eggs. Sift the dry ingredients together, and slowly add them to the mixer, alternating with the soy milk.

Bake at 350 until golden brown on top. Cool for 15 minutes, then invert on a serving tray.
