Time: 30-45 min prep, 30 min baking Serves: 3 dozen 6 eggs, at room temp & separated 1 cup sugar (1/2 cup ea for yolks, whites) 2 cup flour 2 tea baking powder 1/4 tea cream of tartar 2+ tbsp anise seeds 1 tea vanilla 2+ tea lemon juice grated rind of an orange and a lemon 1. Mix flour, baking powder, anise. Set aside. 2. Grate rind into yolks in a small metal bowl. 3. Beat whites in large metal bowl with cream of tartar. Gradually add 1/2 cup sugar, and beat until stiff peaks form. 4. Beat yolks until lemon colored. Add 1/2 cup sugar gradually, beat well, then add vanilla, juice. 5. Pour yolks over whites, add flour mix, and _fold_ until throughoutly mixed (try to keep the mix fluffy). 6. Line cookie sheet with wax paper. Place mixture on in two rows/loaves. Sprinkle top lightly with sugar. 7. Bake at 325F for 30-35 minutes, test with fork/toothpick. 8. (optional) For dried biscuit, remove from oven & slice diagonally. Lay on a flat tray and place in 200F oven, turning frequently until dried.
