Bourbon & Cherry Beef Preheat the oven to 350 Ingredients: 5 lb Lean top sirloin or similar 1.5" thick 8 oz Dried cherries (from TJ's) 1/2 lb small white mushrooms 2 green onions 1 c. Bourbon 2 Tbsp honey 2 Tbsp cornstarch 2 Tbsp water 2 Tbsp butter Olive oil Parsley First, place two glass baking dishes in the oven to warm up. Place the cherries in a large mixing bowl and cover them with the bourbon. While they soak. cut the steak into 1.5" cubes, removing any fat. Add the steak to the cherries and stir until thy are well mixed. Sprinkle wiberally with black pepper and a few Tbs of olive oil. In a bolw, mix the honey, cornstarch, and water. Pour this mixture over the steak and mix again. Mix in some chopped parsley. If you can't smell the bourbon, add more bourbon. Let this sit on the counter for an hour. Chop the onions and quarter the mushrooms. Melt the butter in a skillet and add the onions and mushrooms. Cook them until the mushrooms start to shine, but not until they are limp. Set aside. Remove the hot glass dishes from the oven. Spoon the beef and marinade equally into each dish. Pour the mushrooms on top. Cook this at 350 for 35 minutes for medium donenness.
