Jen's Mom's apple loaf 1 cup veggie oil 2 cups sugar 3 eggs 2 tsp vanilla (I usually use 3 because more vanilla is always good) 3 cup flour 1 tsp salt 1 tsp baking soda 1 tsp cinnamon 3 cups peeled and chopped apples 1 cup chopped walnuts Mix oil, sugar, eggs, and vanilla. Add and mix in flour, salt, soda, and cinnamon. Mix in the walnuts. Mix in the apples last. Spoon into greased and floured loaf pans (2 regular size or 3 small). Sprinkle the top with additional mixed cinnamon and sugar. I usually also sprinkle the top with a few additional walnut chunks. Bake at 325 degrees for 50-60 minutes. Let it cool for a bit before turning it out of the pans, or cut some slices out immediately if you just can't wait.
